  • Boston Baked Beans
    • It's a dish of beans that are usually cooked in some kind of sauce. They usually use haricot beans and a sauce made out of pork and molasses.
  • New England Clam Chowder
    • A milk or cream based chowder with things in it like potatoes, onion, bacon or salt pork, flour, and clams
  • Indian Pudding
    • Made traditionally in New England out of milk, cornmeal, molasses, spices, butter, raisins, nuts
  • Succotash
    • It's a dish mainly made with corn and lima beans; other ingredients can be added like tomatoes, and green or sweet red peppers

Johnnycakes

Ingredients

  • 7 Tablespoons cornmeal
  • 1 Tablespoon sugar
  • ½ teaspoon salt
  • ½ cup milk

Procedure

  1. Place the cornmeal, sugar, and salt in a bowl and pour boiling water over them to scald the cornmeal.
  2. Beat the mixture to a smooth consistency, then beat in the milk.
  3. Grease a heated griddle, drop the batter by spoonfuls on the griddle, and fry until golden brown on each side. For thinner johnnycakes, flatten each cake with a spatula.
  4. Serve warm with maple syrup.
Serves 4 to 6.
